Ingredients:


  • Basmati Rice (2 cups)
  • Chicken/Lamb (500g)
  • Onions (2 medium-sized)
  • Ginger-Garlic Paste (2 tbsp)
  • Yoghurt (1/2 cup)
  • Tomato (1 medium-sized)
  • Red Chilli Powder (1 tsp)
  • Turmeric Powder (1/2 tsp)
  • Garam Masala (1 tsp)
  • Bay Leaves (2)
  • Green Cardamom (4)
  • Black Cardamom (2)
  • Cinnamon Stick (1-inch)
  • Cloves (5)
  • Saffron Strands (a pinch)
  • Milk (1/4 cup)
  • Ghee/Oil (1/4 cup)
  • Salt (as per taste)

Method:


Soak the Basmati rice in water for 30 minutes. Drain and keep aside.

  1. In a pan, heat oil/ghee and add the whole spices (Bay Leaves, Green Cardamom, Black Cardamom, Cinnamon Stick, and Cloves). Saute for 30 seconds.
  2. Add sliced onions and fry until golden brown.
  3. Add ginger-garlic paste and fry for a minute.
  4. Add chopped tomatoes and fry until the oil separates.
  5. Add red chilli powder, turmeric powder, and garam masala. Mix well.
  6. Add yoghurt and stir until well combined.
  7. Add chicken/lamb and mix well. Cook for 10-15 minutes.
  8. In a separate pot, bring water to boil. Add salt, whole spices (Bay Leaves, Green Cardamom, Black Cardamom, Cinnamon Stick, and Cloves), and soaked rice. Cook until the rice is 70% done.
  9. Drain the rice and keep aside.
  10. In a small bowl, soak saffron strands in milk.
  11. In a separate pot, layer half of the cooked rice, followed by the cooked meat, and then the remaining rice.
  12. Drizzle the saffron milk over the rice.
  13. Cover the pot with a tight lid and cook on low flame for 10-15 minutes.
  14. Turn off the flame and let the biryani rest for another 10 minutes.
  15. Garnish with fried onions, chopped coriander, and mint leaves.
